Nothing says summer like fresh, Georgia peaches. However, these delicious fruits don't have to be relegated solely to desserts. They make an incredible addition to many dishes, especially pork chops. Classic City Bee Company smoked honey brings the flavors of your grill indoors. Between the sweet peaches and the smoky flavor of the honey, this entree tastes like a combination of dutch-oven peach cobbler and down-home pork chops.
Ingredients:
- 2 thick pork chops
- salt and pepper to taste
- 2 tablespoons extra virgin olive oil
- ½ cup balsamic vinegar
- 1 tablespoon Smoked Honey
- 1 tablespoon fresh oregano, chopped
- 2 peaches, sliced
- crushed red pepper flakes

Preheat the broiler to high.

Heat a large cast-iron skillet over medium high heat. Season the pork chops all over with kosher salt and pepper. Add olive oil to the skillet and allow it to heat up. Sear the pork on both sides for 3-4 minutes. Reduce the heat to medium and continue cooking for 8-10 minutes, or until the pork chops are cooked through.

In a small bowl, whisk together the balsamic vinegar, honey, and oregano. During the last 2 minutes of cooking, pour the balsamic mixture over the pork chops. Remove from the heat and add the peaches, spooning some mixture over the peaches. Transfer the skillet to the oven and broil for 4-5 minutes or until the peaches are lightly charred.
4. Remove from the oven and top with chili flakes. Serve the pork with the peaches and balsamic sauce from the pan.
